I like to cook my own beans, but I keep cans on hand for convenience and for when I don't plan ahead. The instant pot does a great job if I have an hour, but the cans are great when I just need a cup or so. If you have all day, a slow cooker makes great beans too

I agree!! The last 6 months of travel for me has been all about beans on toast, beans with rice or beans with pasta. Especially in Greece with those delicious giant beans 😋

Mouthwatering as usual, Jack! I feel like this recipe with adapt well with dried beans in the instant pot. I might have to play around with it. I often make giant pots of stew or chili, but this would be great for putting over pasta or quinoa.

I think my favorite quick bean dish is either chili or quinoa kitchari (the recipe from the original 30-minute vegan cookbook). Both are simple, hearty and quick to throw together.
