Welcome to March and by the way, how did we get here so quickly?

This is the first edition of my monthly update, summarizing the work I completed on VeganWeekly and other places of interest…well, at least of interest to me.

Please let me know if you made any of the recipes and what you thought about them. You can leave a comment below, reply to this email or share your creations on social media sites (mentions appreciated). I’m always thrilled to hear from my friends, readers and critiques – so please don’t be shy.

Peace and good health my friends…

Polenta's Versatility is More Than You Think
The celebrated chef and food writer Yotam Ottolenghi reportedly once wrote, “Polenta is to northern Italy what bread is to Tuscany, what pasta is to Emilia-Romagna and what rice is to the Veneto: easy to make, hungry to absorb other flavors, and hugely versatile…

Ideas in Replacing Eggs in Recipes
Eggs have played a role in cooking ever since humans mastered fire. They generate a variety of structures – from light and airy meringues to dense and rich custards; eggs help bind oils with liquids to create smooth sauces; they create flavor and texture of ice cream; they supply richness to soups, stews, bread, pasta and cakes; eggs even put a shine on…

Vegan Pancake Ideas
Virtually every nation has some form of ‘pancake’ in their culinary collection. Consider thick American-style leavened pancakes; very thin crêpes in France; yeasted thin pancakes in Northern Africa; thin crespelle in Italy that are often filled; acidic fermented pancakes called…

The Versatile Lentil
Lentils do not have the most exciting reputation in many parts of the world. But there are cultures who have figured out how to use lentils effectively in the kitchen to create nutritious and tasty recipes for a fraction of what it costs to eat a meat-rich diet…

Other Writing Projects…

A very special book project I was honored and grateful to be a part of was released in early February. The Overcoming Multiple Sclerosis Handbook is a complete guide to a healthy and active life with MS on the Overcoming Multiple Sclerosis Program, with chapters from a team of international experts and personal stories from around the world. I wrote the chapter Eat Well, covering a topic I am intensely passionate about – healthy food and cooking. This ground-breaking book project will help many thousands navigate life with MS. I’m grateful if you could share this important book with anyone you know who is living with MS – either personally or with a close family member or friend.

Looking Ahead…

I have a brief 6-day trip planned for the Algarve region of Portugal. It will be my first trip to this region and I am terribly excited…although somewhat nervous about eating in this notorious non-vegan part of the world. All tips and comments appreciated…or if you feel compelled to offer some more, then consider leaving a free review on our site for reviews and travel tips myfreshattitudeguide.com

My fingers are crossed this month as I await word on the 3-month food writer’s intensive program I applied for – a program offered by Substack to surface, celebrate and accelerate 10 food writers.

I am also finalizing my long-awaited plans to introduce a subscription scheme for VeganWeekly – more on that and how it will affect readers will be disclosed in the coming weeks.

Reading Ideas…

Some of the books I’ve read during the past month include:

  • To learn more about living a vegan life Vegan for Life, by Jack Norris

  • Just for fun and adventure The Mysterious Island, by Jules Verne

  • For spiritual purpose and awakening A New Earth, by Eckhart Tolle

* Disclosure…I do not receive anything by making these recommendations.

Hey Jack, I love the new format! And it's so cool to start a day with being mentioned like that. Thanks a lot! 😊

P.S. Tortilla recipe is still waiting to be tried out.. but when I succeed you'd be the first to know!
